Frugal Meal Friday 7/17

Every Friday I will be sharing with you a frugal recipe. These meals will average $5 or less for a family of four, and many will give you lots of leftovers for lunches. This week I decided to share with a wonderful recipe using chicken. This is originally from Kraftfoods.com and you can find it here. The total comes to a little over $6, but you get a lot of leftovers for the next day and it super yummy. Although the original recipe says chicken leg quarters, I have substituted with breast and they still tasted great.

Italian Chicken Simmer

Ingredients:
1 tbsp olive oil - $neg.
1 1/2 pounds of chicken, skin removed - $3
1/3 cup tomato paste - $.30
1 can (14 1/2 oz) dice tomatoes, preferably Italian-style - $.50
3 cups chopped red pepper (about 2 small) - $1
1/4 cup grated Parmesan cheese - $.45
1/2 cup shredded Mozarella - $1.50

Directions:
1. Heat oil in large pan on medium-high heat. You may need to cut apart chicken legs and thighs, or if you are using breasts, you may want to cut in half. Add the chicken to the skillet, and cook 10 minutes until both sides are brown, turn occasionally.
2. Add the can of tomatoes with their liquid and the tomato paste and mix well. Stir in peppers and cover. Simmer for 20 minutes or until chicken is cooked through.
3. Remove pan from heat and stir in Parmesan. Sprinkle with shredded cheese. Serve with rice if you would like.

    FREE FOOD WAS NOT EVEN MENTIONED IN THIS POST. SO, I AM TRYING TO FIGURE OUT WHERE THIS COMMENT IS COMING FROM. MY GUESS IS THAT YOU READ A DIFFERENT POST WHERE WE GOT SOME EXTRA FOOD THAT WAS LEFTOVER AFTER A FAMILY GET-TOGETHER.

    NO, I DO NOT FEEL EMBARRASSED TO TAKE THIS FOOD. THEY ARE AFTER ALL FAMILY AND WE WERE NOT THE ONLY ONES TO TAKE LEFTOVERS HOME. YOU CAN'T TELL ME THAT YOU HAVE WENT TO FAMILY GET-TOGETHERS AND NEVER EVER TAKEN LEFTOVER FOOD HOME. I WOULD RATHER TAKE FOOD HOME THAN SEE IT END UP IN THE GARBAGE CAN!!

    NO, WE ARE NOT LINED UP AT THE FOOD BANK, LUCKILY, BECAUSE I HAVE ALWAYS STOCKPILED AND BEEN ABLE TO GET REALLY GOOD DEALS WITH COUPONS. BUT IF I HAD TO I WOULD STAND IN LINE TO GET FOOD FOR MY KIDS. I REALLY DON'T CARE WHAT ANYONE THINKS OF ME, AS LONG AS MY FAMILY'S NEEDS ARE TAKEN CARE OF. I WOULD HOPE YOU WOULD DO THE SAME FOR YOURS.

  3. In this day and age, the implication of free food, means many different things on many different levels. This site is not an abusive site, it shares as opposed to hordes. Any implication that one should be embarrassed to accept free food is off base. I can't see where taking free food was posted here either. If you are referring to another post,...Family is family and if you don't have family that shares food when there is left overs- well you are just missing out! Now there are people who you can see coming. The ones who always fix a plate or 6 before the meal is even done, just to make sure there is some for them to take home. Some folks may need that, some may just be acting selfish. Remember lots of older folks come from the 1930's where they may have always wondered where the next meal was coming from. My dad was like that when I grew up, and in his 70's is still like that today- even though he has plenty. It's engrained. Annon 's remark was a bit short and I feel unfair. CQOC, I love the blog, twitter and even stuff I find shared on facebook from you. You get a pass on that comment 7/27 5:28pm! You are ok in my book!
